Sourdough Sticks

Just another one of my crazy bread ideas.  Sometimes I roll out my sourdough preferment into ropes and cut it up into pieces to add to the dough.  When I do this I have thought to myself I need to make some bread that is rolled out like that.  Well I finally did it.  The dough for this is really nice and supple.  This bread ended up being a fun fast easy bread to make.  I already ate some of it and it has a nice light sweetness to it.  I'm going to take some to work to see what my co-workers think of them.  Here is how I made the bread.

 

The preferment is made in two builds and is 100% hydration.

Formula Grams Precent
Flour* 458 100%
Water 298 65%
Salt 9 2%
Preferment 435 95%
Total 1200 262%

*The flour is 90% bread flour and 10% whole wheat.

I took the water and warmed it up for 30 seconds in the microwave then pour it into a mixing bowl.  The tempreature of the water was warm not hot.  Then I scraped all the preferment into the bowl and mixed all up with the water until it had all broken up.  I added the flour in stages mixing it all up with the water before adding more flour.  When the flour had all been added I let it set for 30 minutes then added the salt and finished mixing the dough.  I mixed this dough by hand with a dough scraper, seemed to work out well.  The dough was streached after about an hour and retured to the bowl.  The dough felt really good after three hours so I turned it out onto a bed of flour and started cutting pieces off of the dough.  I would then roll them out like rope and place them on a parchement lined cookie sheet.  When I had the dough all cut and rolled out I turned the oven on and preheated it to 460°.  The sticks were cooked for 25 minutes without any steam.  I love how they look with their irregular bumps and lumps.

Can you give the measurement in cups, spoons. Also what is preferment is, (is that the yeast, or a sourdough starter? The bread sticks look very good, I would like to try to make them, but I have no way to measure the way you do.

Sorry I only do formulas by weight. I weighed a cup of flour and found that it can vary from 100 grams to 150 grams. The preferment is sourdough, I don't do yeast. Getting a scale was one of the best investments I ever made as it helped my bread making get much better.
